Low in calories and full of vitamins, minerals and antioxidants, jalapeños are a great way to add flavor to almost any dish and can even help curb your appetite and boost your metabolism! So with no further ado, here are some of our favorite ways to spice up your next meal…

Jalapeño Relish via Cookie and Kate

Forget the store bought pickled ones and make this amazing relish and then make some grilled fish tacos

IngredientsJalapeño Relish via Cookie and Kate

1 fresh jalapeño
½ pineapple
1 cucumber
½ a freshly squeezed lime
1 tsp orange zest
2 tbsp finely chopped cilantro
1 tbsp very finely chopped  red onion
1 tsp fine sea salt
1 tsp black pepper

 

 

 

Prep Instructions

  1. Mash up some garlic then deseed and roughly chop up your jalapeños.
  2. Place the jalapeños and mashed garlic in the food processor and pulse a few times just until the jalapeños are finely chopped but stop before they are a wet purée.
  3. Stir in the apple cider vinegar and salt and voila!

Spicy Pineapple Salsa

Who doesn’t love a good pico de gallo or guacamole but when was the last time you made a really good salsa for the first time? We love this with some grilled fish, jerk chicken or steak fajitas!.

 

IngredientsSpicy Pineapple Salsa

1 fresh jalapeño
½ pineapple
1 cucumber
½ a freshly squeezed lime
1 tsp orange zest
2 tbsp finely chopped cilantro
1 tbsp very finely chopped  red onion
1 tsp fine sea salt
1 tsp black pepper

 

Prep Instructions

  1. Deseed and dice, as thinly as possible, your jalapeño then finely chop about a quarter of a red onion and transfer to a mixing bowl.
  2. Add the fresh lime juice, orange zest and cilantro and let sit for about 10 min. Meanwhile prepare the remaining ingredients.
  3. Peel and dice your pineapple. The pineapples should be the chunkiest element in the salsa and we like ours about 1 cm. Then peel and dice your cucumber into slightly smaller pieces.
  4. Toss the pineapples and cucumber with the base mix and add salt and pepper to taste.

 

Lemon-Jalapeño Spritzer

Swap out mineral water with some sparkling water next time you’re making a lemonade and add a few jalapeno slices to the blender!

Serve over lots of ice and chill J
